Recipe>
1. Rice (2cups)
2. Coconut milk
3. Curry and thyme (powder)
4. Goat/beef meat - stock - water
5. Ginger and garlic (crushed)
6. Onions (chopped)
7. Seasoning cube/powder/magi
8. Fresh hot peppers (scotch bonnet)
9. Fresh tomatoes
10. Tomatoes paste
11. Red and yellow bell peppers (chopped)
12. Veg.oil and salt to taste.
PROCEDURES>
(*Step1*) Start by blending the fresh tomatoes, fresh peppers and one big onion into a paste.
Use the paste to prepare tomato stew/ sauce and set aside in a clean plate.
(*Step2*) On medium low heat;
Place your pot, add some veg.oil, sliced onions, crushed garlic and stir fry for few minutes.
(*Step3*) Now, add the blended mixture (from *Step1*), season and spice with seasoning cube, curry, and salt to taste.
Stir and combined together; Allow frying for some minutes (10 - 15mins)
(*Step4*) Wash and cut goat meat (or any of your preference)
Add the pieces into the pot (on a medium low heat) add some water, season with chopped onions, thyme and seasoning cubes.
Cook until the meat is tender and tasty.
Drain out the meat stock and set aside.
(*Step5*) Add the meats to the pepper stew (from *Step3*)
Stir and combine the meat to make it juicy-moist
Add the bell pepper (red and green).
Cook for few minutes and set aside.
(*Step6*) Wash the rice and rinse thoroughly
Parboiled
Drain and set aside.
(*Step 7*) On medium low heat;
Get a clean pot; add the coconut milk, meat stock and stew (from *step5*)
Bring to boil before adding your parboiled rice;
stir and incorporate all together (with a spatula)
Add some salt to taste (adjust the spice/flavours here if necessary)
Cover with lid and allow to cook through
(check from time to time; ensure the water doesn't dried or burnt before cook through)
Once the rice is ready;
Turn off the heat, (allow cooling for some minutes)
Serve with chilled drink
